  • 11/2 cups shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 zucchini squash (sliced thin)
  • 45 tomatoes (sliced)
  • 2 tablespoons melted butter
  • 3/4 cup fine bread crumbs

Instructions

  1. Preheat oven to 375Β°F. Grease a 9×9 baking dish with nonstick cooking spray.
  2. In a mixing bowl, combine mozzarella, Parmesan, garlic powder, basil, oregano, salt, and pepper.
  3. Layer sliced zucchini in the baking dish; sprinkle with 1/4 of the cheese mixture. Add a layer of sliced tomatoes followed by another 1/4 of the cheese mixture. Repeat until all ingredients are used.
  4. Mix melted butter with breadcrumbs and sprinkle on top.
  5. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 20 minutes until golden brown.
