  • 4 medium zucchini
  • 2 eggs
  • 1/4 cup grated parmesan cheese
  • 1 lb ground turkey
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 bell pepper, chopped
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1 tablespoon Italian seasoning (divided)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grate zucchini and drain excess moisture in a colander.
  3. In a mixing bowl, combine drained zucchini with eggs, parmesan cheese, black pepper, onion powder, and Italian seasoning.
  4. Press the mixture into a greased 9×13 baking pan and bake for 20 minutes.
  5. In a skillet over medium heat, sauté onions and bell peppers in olive oil until soft. Add garlic and ground turkey; cook until done.
  6. Stir in marinara sauce and remaining Italian seasoning.
  7. Spread the turkey mixture over the baked zucchini base.
  8. Top with mozzarella cheese and bake for another 20 minutes until bubbly and golden.
