  • 2 cups shredded zucchini (squeezed)
  • 1 cup Panko bread crumbs
  • 2 eggs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup shredded Mozzarella cheese
  • 2 garlic cloves (minced)
  • Salt and pepper (to taste)
  • 3 tbsp canola oil (for cooking)

Instructions

  1. Grate the zucchini using a box grater and squeeze out excess moisture using a mesh bag or cheese cloth.
  2. In a mixing bowl, combine squeezed zucchini, Panko bread crumbs, eggs, cheeses, minced garlic, salt, and pepper. Mix until well blended.
  3. Preheat a large pan over medium heat. Add canola oil.
  4. Use an ice cream scoop to portion the mixture into fritters and shape them gently with your hands.
  5. Cook each fritter for 4-6 minutes on each side until golden brown.
