  • 2 Zucchini
  • 1 Carrot
  • 2 tablespoons Olive Oil
  • 1 Brown Onion
  • 2 Turkey Slices
  • 1/2 Red Bell Pepper
  • 5 Eggs
  • 1/4 cup Milk
  • 1 cup Self-Raising Flour
  • 1 1/4 cups Grated Cheddar Cheese
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 180C (350F). Line a 9 x 9-inch baking dish with baking paper.
  2. Grate the zucchini and carrot into a colander, sprinkle with salt, and let sit for about 10 minutes to remove excess moisture.
  3. In a frying pan over medium heat, heat 1 tablespoon of olive oil. Add diced onion and turkey slices; cook until golden brown then let cool slightly.
  4. Squeeze excess moisture from the grated veggies and combine them in a mixing bowl with bell pepper, cooled onion, turkey slices, cheese, flour, eggs, milk, remaining olive oil, salt, and pepper. Mix well.
  5. Pour the mixture into the prepared baking dish; reserve some cheese to sprinkle on top before baking. Bake for about 35–40 minutes or until firm to touch. Let cool before slicing.
