  • 35 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 cup beef broth
  • 1 tbsp dried chives
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp dried dill
  • 68 whole pepperoncini peppers
  • 12 tbsp pepperoncini pepper juice (from the jar)
  • 4 tbsp ghee

Instructions

  1. 1. Sear the seasoned chuck roast in olive oil in a large skillet until golden brown on all sides.
  2. 2. Deglaze the skillet with beef broth to capture all the flavorful bits and pour over the roast in the slow cooker.
  3. 3. Add dried spices and pepperoncini around the roast, topping with ghee.
  4. 4. Cook on low for 8-10 hours or high for 5-6 hours until tender.
  5. 5. Serve as desired, either on its own or over a base of mashed cauliflower or rice.
