  • 2 cups chopped rotisserie chicken
  • 2 tbsp olive oil
  • 2 apples (peeled and roughly chopped)
  • 1 white onion (peeled and diced)
  • 2 1/2 cups chicken broth
  • 3/4 cup half & half
  • 2 cups shredded Mexican cheese blend
  • 2 cans cannellini beans (drained)
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 4 tbsp butter
  • 1/4 cup flour
  • salt & pepper (to taste)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté apples and onions for about 6-8 minutes until soft. Stir in chili powder and cumin.
  2. Reduce heat to medium-low, melt butter in the same pot, and whisk in flour. Cook for about a minute.
  3. Gradually add chicken broth while whisking; then stir in half & half until thickened (about 3-5 minutes).
  4. Mix in the sautéed apple-onion mixture, chicken, and beans until combined.
  5. Adjust thickness with additional broth if needed, then stir in cheese until melted.
  6. Serve hot with your favorite toppings.
