Ingredients

  • Oil or water (for oil-free cooking)
  • Onion
  • Carrots
  • Celery
  • Garlic
  • Optional vegan beef or portobello mushrooms
  • Rutabaga (swedish turnips)
  • Potatoes
  • Green cabbage
  • Vegetable stock
  • Soy sauce or Tamari
  • Fresh herbs (thyme, rosemary)
  • Bay leaves

Instructions

  1. Gather and chop all vegetables into even-sized pieces.
  2. Heat oil in a large Dutch oven over high heat; sear the optional vegan beef or mushrooms until golden brown, then set aside.
  3. Lower the heat to medium and add onions, carrots, celery, and garlic; cook until they begin to soften.
  4. Stir in flour until combined. Gradually add vegetable stock while stirring to reduce lumps.
  5. Add rutabaga, potatoes, cabbage, soy sauce, salt, pepper, sugar, and herbs; mix well.
  6. Bring to a boil then reduce heat; simmer uncovered for 45–50 minutes until potatoes are soft.
  7. Return seared vegan beef/mushrooms to the pot during the last ten minutes of cooking.
