  • ½ cup (120 ml) milk or buttermilk
  • 1 teaspoon vanilla extract
  • ½ cup (113 g) unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9-inch cake pan with parchment paper.
  2. In a saucepan over medium heat, melt the unsalted butter. Once melted, add the brown sugar, stirring continuously until it dissolves. If using it, mix in the maple syrup. Pour this mixture into the prepared pan and sprinkle with chopped pecans, ensuring an even layer.
  3. In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  4. In another bowl, beat together the eggs and granulated sugar. Stir in the milk or buttermilk, vanilla extract, and melted unsalted butter. Mix until well combined.
  5. Add the dry ingredients to the wet mixture. Gently fold until just combined; be careful not to overmix to keep your cake light.
  6. Pour the batter over the pecan layer in the pan. Bake in the preheated oven for about 35–40 minutes or until golden brown and a toothpick inserted in the center comes out clean.
