  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 400g canned chopped tomatoes
  • 200ml chicken stock
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • Fresh parsley for garnish (optional)
  • 2 cups cooked white rice

  1. Heat olive oil in a large pan over medium heat. Sauté diced onion and minced garlic until soft (3-4 minutes).
  2. Add chicken pieces, season with salt, pepper, smoked paprika, and oregano. Cook until lightly browned.

  4. Pour in chopped tomatoes and chicken stock; stir to combine.
