  • 2/3 cup (135 grams) granulated sugar (plus 3 tablespoons (40 grams) for rolling the cookies)
  • 2 large egg yolks (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 2 and 1/3 cups (290 grams) all-purpose flour (spooned & leveled)
  • 1/2 cup strawberry or apricot jam

Instructions

  1. Preheat your oven to 350°F (177°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add egg yolks, vanilla extract, and salt, mixing until combined.
  3. Gradually mix in flour until the dough comes together.
  4. Roll the dough into balls and place on prepared baking sheets. Press an indentation in each ball and fill with jam.
  5. Bake for 12-14 minutes until lightly browned on the bottoms. Allow cooling on wire racks.
