  • 12.5 g Fresh yeast
  • 1 Egg yolk (room temperature)
  • 1 Egg (room temperature)
  • 250 g Bread flour (high protein content flour)
  • ¼ teaspoon Salt
  • 80 g Unsalted butter (room temperature)
  • 150 g Apple (measure after peeled and cut into small identical pieces)
  • a small amount of freshly squeezed lemon juice (drizzle the apple slices right after cutting)
  • 80 g Brown sugar
  • 60 g Unsalted butter
  • 1 teaspoon Cinnamon (or a mix of cinnamon, ginger, nutmeg)
  • 60 g Water
  • 20 g Lemon juice (freshly squeezed)
  • 80 g Granulated sugar

Instructions

  1. In a mixing bowl, combine lukewarm milk, granulated sugar, and fresh yeast. Let sit until bubbly.
  2. Add egg yolk and whole egg; whisk until smooth.
  3. Gradually add bread flour and salt to form a dough; knead in butter until smooth.
  4. Allow the dough to rise until doubled in size (~1 hour).
  5. Prepare filling by chopping apples and combining melted butter with brown sugar and cinnamon.
  6. Roll out the dough into a rectangle, spread filling evenly, and add chopped apples.
  7. Roll tightly into a log, slice lengthwise to expose filling, and twist halves together.
  8. Transfer to a baking sheet lined with parchment paper; let rise again (~30 minutes).
  9. Preheat oven to 350°F (175°C) and bake for about 40 minutes until golden brown.
