  • 1 cup chopped walnuts
  • 1/2 cup salted butter (room temperature)
  • 8 ounces cream cheese (room temperature)
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, combine vegetable oil and granulated sugar. Mix in eggs one at a time and stir in vanilla extract.
  3. In another bowl, whisk together flour, ground cinnamon, salt, baking soda, and baking powder. Gradually add this dry mixture to the wet ingredients until just combined.
  4. Fold in shredded zucchini, shredded carrot, rolled oats, and chopped walnuts until evenly distributed.
