  • 8 oz Monterey Jack cheese, shredded
  • ½ cup mayonnaise
  • 1 tbsp fresh sage, chopped
  • 4 10-inch flour tortillas
  • 1 lb leftover turkey (white or dark)
  • 12 oz leftover stuffing
  • ½ cup whole berry cranberry sauce

Instructions

  1. In a medium bowl, mix shredded cheese, mayonnaise, and chopped sage until well combined.
  2. Spread the cheese mixture evenly over each tortilla.
  3. On one half of each tortilla, layer turkey, stuffing, and cranberry sauce. Fold the other half over to form a pocket.
  4. In another bowl, mix together ingredients for the dipping sauce and set aside.
  5. Heat a skillet over medium heat and cook folded quesadillas for 1-2 minutes on each side until golden brown. Repeat with remaining quesadillas.
  6. Cut each quesadilla in half and serve with the creamy dip.
