  • 500 g boneless chicken breast, diced
  • 6 tablespoons cornstarch
  • 50 ml vegetable oil
  • 1 onion, thinly sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 432 g tin pineapple pieces (drained)

Instructions

  1. Toss diced chicken with cornstarch in a mixing bowl; season with salt and pepper.
  2. Heat vegetable oil in a wok over medium-high heat.
  3. Fry coated chicken in batches until golden brown (4-5 minutes per batch); set aside.
  4. In the same pan, stir-fry onion and bell peppers for 3-4 minutes.
  5. Mix ketchup, cider vinegar, brown sugar, soy sauce, ginger, and garlic; add to vegetables.
  6. Return chicken and drained pineapple to the pan; stir to combine and heat through for another 3-4 minutes.
