  • 1 ⅔ cups sugar
  • 2 eggs
  • 1 ½ tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 3 cups diced & peeled apples (about 2 large apples)
  • Optional: ¼ cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, mix together flour, baking soda, salt, cinnamon, and nutmeg; set aside.
  3. Cream butter and sugar until fluffy. Add eggs one at a time and stir in vanilla.
  4. Gradually combine dry ingredients with the wet mixture; fold in diced apples and nuts if using.
  5. Pour the batter into the prepared pan and bake for about 35 to 40 minutes until golden brown.
  6. Prepare caramel sauce by heating brown sugar, half & half, and butter in a saucepan until smooth. Drizzle over the cake and return it to the oven for an additional 10 to 15 minutes.
  7. Allow cooling for at least 15 minutes before serving.
