Instructions

  1. In a small nonstick skillet, heat a splash of olive oil over medium heat. Crack in the egg and cook sunny-side-up until the white is set and the yolk remains runny.
  2. In a mixing bowl, arrange the halved avocado, avocado slices, cherry tomatoes, corn, and fresh parsley or arugula.
