  • 1 large egg
  • 1 ripe avocado, sliced
  • 34 cherry tomatoes, halved
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup carrot slices
  • 1 tsp olive oil or butter
  • Salt & freshly cracked black pepper to taste

Instructions

  1. In a non-stick skillet over medium-low heat, add olive oil or butter. Carefully crack the egg into the skillet and cook until the whites are set but the yolk remains runny. Season with salt and pepper.
  2. Meanwhile, steam the broccoli, cauliflower, and carrot slices in a steamer basket over boiling water for about 4-5 minutes until tender-crisp.
  3. To serve, arrange the cooked egg on one side of a plate alongside avocado slices and halved cherry tomatoes. Add the steamed vegetables and sprinkle with extra black pepper if desired.
