  • 1/3 cup fresh strawberry puree
  • 1/4 cup buttermilk
  • 1/2 tsp vanilla extract
  • 5 drops red food coloring (optional)
  • 3/4 cup diced strawberries
  • 1/2 cup + 2 Tbsp strawberry puree (for frosting)
  • 1/2 cup unsalted butter (nearly at room temperature)
  • 1/4 cup salted butter (nearly at room temperature)
  • 2 1/22 3/4 cups powdered sugar
  • 1/4 tsp vanilla extract (for frosting)
  • 4 drops red food coloring (optional, for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, sift together cake flour, baking powder, and salt; set aside.
  3. In a stand mixer, beat softened butter and sugar until pale and fluffy. Add eggs one at a time.
  4. Mix in buttermilk and strawberry puree. Gradually add dry ingredients until combined.
  5. Fold in diced strawberries gently.
  6. Fill muffin cups about three-quarters full and bake for 20-23 minutes or until a toothpick comes out clean.
  7. Allow cupcakes to cool before frosting with whipped strawberry buttercream.
