  • 1 cup homogenized milk
  • 3 tablespoons butter
  • 1 cup dark brown sugar
  • 2 eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • 2 cups unbleached all-purpose flour
  • ½ cup butter (for caramel sauce)
  • 1 cup brown sugar (for caramel sauce)
  • ½ cup cream (for caramel sauce)
  • Sea salt flakes (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
  2. In a bowl, combine chopped dates and baking soda, then scald the milk and pour it over the dates. Let it cool for about 15 minutes.
  3. In another bowl, mix flour, baking powder, and salt. In a food processor, blend eggs, brown sugar, melted butter, and vanilla until combined. Gradually add dry ingredients followed by the soaked dates and their liquid to form a smooth batter.
  4. Pour batter into the prepared dish and bake for about 30 minutes until golden.
  5. For the caramel sauce, melt butter in a saucepan, stir in brown sugar and kosher salt until dissolved, then add cream slowly while stirring until bubbling. Simmer for about 10 minutes until thickened.
  6. Once the cake is baked, poke holes in it and pour one-third of the warm caramel sauce over it to soak in.
  7. Let it rest for 15 minutes before serving warm with additional caramel sauce and whipped cream.
