Ingredients

Scale
  • 2 lbs beef chuck or stew meat
  • 1 large onion
  • 4 cloves garlic
  • 1 tbsp fresh ginger
  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp chili flakes
  • 1 tbsp vegetable oil
  • Salt and pepper to taste
  • 34 cups water
  • 1 can (14 oz) coconut milk

Instructions

  1. 1. Season the beef with salt and pepper. In a heavy-bottomed pot, heat vegetable oil over medium-high. Brown the beef on all sides in batches; set aside.
  2. 2. In the same pot, sauté chopped onion until translucent (about 5 minutes). Add minced garlic and grated ginger; cook until fragrant.
  3. 3. Stir in the spices and cook for about a minute.
  4. 4. Return the beef to the pot and add enough water to cover it (3-4 cups). Bring to a boil, then reduce heat to low, cover, and simmer for at least 2 hours until tender.
  5. 5. Stir in coconut milk and simmer uncovered for another 15-20 minutes until slightly thickened. Adjust seasoning before serving warm over rice.
