  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • 1 tsp salt (or to taste)
  • 1 can (14 oz) coconut milk
  • 1 cup beef broth
  • 2 tbsp tomato paste

Instructions

  1. Prepare the ingredients by chopping the beef, onion, and mincing the garlic and ginger.
  2. In a large skillet over medium heat, heat vegetable oil and sauté the onion until translucent.
  3. Add garlic and ginger; cook for another minute.
  4. Mix in curry powder, cumin, turmeric, chili powder, and salt; cook for about 2 minutes until fragrant.
  5. Transfer to a slow cooker along with beef cubes, coconut milk, beef broth, and tomato paste; stir well.
  6. Cook on low for 6-8 hours until beef is tender.
  7. For the naan: Brush with melted butter mixed with minced garlic and toast until golden brown.
