  • 3 tablespoons butter (divided)
  • 2 small zucchini (sliced)
  • 1 small yellow onion (diced)
  • 1 pound small button mushrooms (cleaned)
  • 3 to 4 cloves garlic (minced)
  • ¼ cup vegetable broth
  • Salt and black pepper (to taste)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Heat olive oil and ½ tablespoon butter in a large skillet over medium-high heat.
  2. Add zucchini slices, season with salt and pepper, and cook for 3 to 4 minutes until fork-tender. Remove from skillet.
  3. Add remaining butter to the skillet, melt, then stir in onions; cook for about 2 minutes until softened.
  4. Add mushrooms, cooking for 5 to 7 minutes until browned.
  5. Stir in garlic and herbs; cook for another 20 seconds until fragrant.
  6. Return zucchini to the skillet, mix well with mushrooms, and cook for an additional minute.
  7. Pour in vegetable broth and let simmer for about 2 minutes until slightly thickened. Adjust seasoning as needed.
  8. Garnish with chopped parsley before serving.
