  • 2 medium zucchini (cubed)
  • 4 fully cooked chicken sausages (sliced into circles ¼-inch thick)
  • 1 onion (cut into ¾-inch pieces)
  • 1 bell pepper (any color, cut into ¾-inch pieces)
  • Olive or avocado oil
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt
  • 1 tsp garlic (minced)

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat until hot.
  2. Add the sliced chicken sausage and sauté until browned. Remove from pan and set aside.
  3. In the same skillet, reduce heat to medium and add another 1½ tablespoons of oil along with zucchini, onion, and bell pepper. Season with garlic powder, oregano, basil, onion powder, salt, and pepper. Stir well and cook until onions are translucent and peppers are tender (about 5 minutes).
  4. Return the browned sausage to the skillet with minced garlic. Stir to combine and cover for a few minutes to meld flavors.
