  • lbs sirloin tips, cubed
  • 3 tbsp flour
  • 3 tbsp olive oil
  • 2 cups beef broth
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp butter
  • 1 tsp brown sugar
  • ½ tsp each: salt, garlic powder, onion powder, chili powder, paprika
  • ¼ tsp black pepper
  • 1 beef bouillon cube
  • ¼ tsp each: dried thyme, rosemary
  • 3 tbsp cornstarch + ¼ cup cold water (for slurry)

Instructions

  1. Season the cubed sirloin tips with salt and spices. Dust with flour.
  2. Heat olive oil in a skillet over medium-high heat and brown the beef in batches. Remove and set aside.
  3. Sauté diced onions and minced garlic in butter until translucent.
  4. Add beef broth and scrape the pan for flavor bits. Stir in bouillon cube and seasonings.
  5. Return browned beef to the skillet; simmer for 20–25 minutes until tender.
  6. Thicken the gravy by mixing cornstarch with cold water; stir into the gravy until desired thickness is achieved.
