  • 1 1/2 lbs large shrimp, peeled and deveined
  • 2 Tbsp dry white apple vinegar or chicken broth
  • 4 tsp minced garlic
  • 2 tsp lemon zest
  • 6 Tbsp unsalted butter, diced
  • 1 lb medium-thickness asparagus

Instructions

  1. Preheat your grill to medium-high heat (400 – 425°F).
  2. Cut four sheets of heavy-duty aluminum foil (14×12 inches) and lay them out.
  3. Divide shrimp among packs at the center, placing asparagus on one side.
  4. Pour vinegar over each pack, sprinkle with garlic and lemon zest, and season with salt and pepper.
  5. Top with butter cubes evenly divided among the packets.
  6. Wrap the foil tightly to seal, leaving some space for steam circulation.
  7. Grill sealed side up for about 9 – 10 minutes until shrimp are cooked through.
  8. Unwrap carefully and drizzle with lemon juice before serving.
