  • 1 tablespoon olive oil
  • 1 bag tortilla chips
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup black beans
  • ½ cup corn kernels
  • ½ cup diced tomatoes
  • Optional toppings: sliced jalapeños, red onion, cilantro

Instructions

  1. Cook the Tofu: Heat olive oil in a skillet over medium heat. Add shredded tofu and seasonings (chipotle powder, smoked paprika, cumin, salt, and pepper). Cook for 5–7 minutes until browned and crispy.
  2. Preheat the Oven: Set your oven to 375°F (190°C).
  3. Assemble the Nachos: Spread tortilla chips on a baking sheet. Top with cooked shredded tofu, cheese, black beans, corn, tomatoes, jalapeños, and red onion.
  4. Bake: Place in the oven for 10–12 minutes until the cheese is melted and bubbly.
  5. Garnish & Serve: Remove from oven and sprinkle with chopped cilantro. Serve warm with sour cream or guacamole.
