  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, peeled and diced
  • 1 celery stalk, diced
  • 1 tablespoon tomato paste
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon rosemary
  • 1/4 teaspoon ground cinnamon
  • Salt and pepper, to taste
  • 1/2 cup beef or vegetable broth
  • 1/2 cup frozen peas
  • Sweet potatoes for topping

Instructions

  1. Peel and chop sweet potatoes into chunks. Boil in salted water until tender (about 15-20 minutes). Drain and mash with olive oil until smooth; set aside.
  2. In a cast iron skillet over medium heat, add olive oil and sauté diced onions until translucent (about 5 minutes). Stir in minced garlic, diced carrot, and celery; cook until softened.
  3. Add ground lamb to the skillet, browning it for about 8-10 minutes. Mix in tomato paste, dried thyme, rosemary, ground cinnamon, salt, pepper, broth, and peas; let simmer for 5 minutes.
