  • 3 lb boneless pot roast (chuck)
  • 1 teaspoon fine sea salt
  • 1 teaspoon freshly ground black pepper
  • 3 lbs yellow onions
  • 2 cloves garlic
  • 1 tablespoon pure maple syrup or brown sugar
  • 1 tablespoon all-purpose flour or gluten-free AP flour
  • 1 cup red apple vinegar or beef stock
  • 2 1/2 cups beef stock
  • 1 sprig fresh rosemary
  • 1 bay leaf

Instructions

  1. Preheat a Dutch oven over medium heat with 1 tablespoon of olive oil. Season the pot roast with half of the salt and pepper.
  2. Sear the pot roast on all sides until browned, about 10-12 minutes. Transfer to a plate.
  3. Slice onions using a food processor. Add remaining olive oil to the Dutch oven and cook onions over medium heat until translucent, about 5 minutes.
  4. Reduce heat to medium-low and caramelize onions for an additional 20 minutes until light golden brown.
  5. Add garlic and maple syrup, cooking for another 7-8 minutes.
  6. Sprinkle flour over the onions; deglaze with apple vinegar and add beef broth.
  7. Return pot roast to the Dutch oven; add rosemary and bay leaf. Bring to a simmer.
  8. Cover with a lid and bake in a preheated oven at 300°F for about 3 hours until fork-tender.
  9. Let it rest before serving hot with your favorite sides.
