  • Zest of 1 lemon
  • ½ cup raspberry jam or preserves
  • ½ cup lemon curd
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 23 tbsp heavy cream or milk
  • 1 tsp vanilla extract
  • Fresh raspberries for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
  3. In another bowl, cream softened butter and granulated sugar until fluffy. Add eggs one at a time, followed by vanilla extract and lemon zest.
  4. Gradually mix in dry ingredients alternately with buttermilk until just combined.
  5. Fill cupcake liners two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean. Cool on a wire rack.
  6. Once cooled, hollow out the center of each cupcake and fill with half raspberry jam and half lemon curd; replace top.
  7. For frosting, beat softened butter until smooth, then gradually add powdered sugar and vanilla extract; adjust consistency with cream if needed.
  8. Frost each cupcake generously and garnish with fresh raspberries.
