  1. Place shredded zucchini in a colander, sprinkle with salt, and let sit for 10 minutes to drain excess moisture.
  2. In a large mixing bowl, combine drained zucchini, shredded carrots, minced garlic, flour, eggs, scallions, salt, and pepper. Mix until well combined.
  3. Heat olive oil in a sauté pan over medium-high heat until shimmering.
  4. Scoop about 3 tablespoons of the mixture into the pan for each fritter. Flatten slightly and space them apart. Cook for 2-3 minutes until golden brown; flip and cook an additional 1-2 minutes until crispy.
  5. Transfer cooked fritters to paper towels to drain excess oil and season with salt while hot.
