  • 1/2 cup light brown sugar
  • 1 egg
  • 1/4 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1/4 cup almond flour
  • 2 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegan mini marshmallows
  • 1/2 cup semi-sweet chocolate chips or chunks

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix almond butter, brown sugar, pumpkin puree, vanilla extract, and egg until well combined.
  3. In another bowl, whisk together almond flour, pumpkin pie spice, baking soda, and salt.
  4. Combine the dry ingredients with the wet mixture and fold in chocolate chips.
  5. Scoop the dough onto the prepared baking sheet using a cookie scoop; place mini marshmallows into each scoop so they peek out.
  6. Bake for 10–12 minutes until golden brown.
