  • 1/4 cup chopped pecans (for topping)
  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together 1 cup + 3 tablespoons flour, 2 teaspoons baking powder, 1/2 teaspoon salt, 3/4 cup granulated sugar, and spices (1 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 1/2 teaspoon cloves).
  3. In another bowl, combine 1/2 cup pumpkin puree, 1/4 cup milk, 1/4 cup melted butter (or vegetable oil), and 1 1/2 teaspoons vanilla.
  4. Mix wet ingredients into dry ingredients until just combined; pour into an 8-inch casserole dish.
  5. In a separate bowl, mix together topping ingredients: 1/2 cup granulated sugar, 1/2 cup brown sugar, and 1/4 cup chopped pecans. Sprinkle over the batter.
  6. Carefully pour in 1 1/2 cups very hot water without stirring.
  7. Bake for approximately 40 minutes until set in the middle. Cool for 5-10 minutes before serving.
