Ingredients

Scale
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1 cup canned pumpkin puree
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 8 oz cream cheese softened
  • 1/3 cup white sugar
  • 1/2 cup light brown sugar
  • 1/2 cup white sugar
  • 1/2 cup butter
  • 1/2 cup flour
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine vegetable oil and sugar until smooth. Add eggs one at a time, followed by pumpkin puree and vanilla; mix well.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and ginger. Gradually incorporate the dry mixture into the wet ingredients until just combined.
  4. In a separate bowl, blend softened cream cheese with white sugar and vanilla until creamy.
  5. Pour half of the pumpkin batter into the prepared pan, layer with cream cheese mixture, then top with remaining batter.
  6. For the streusel topping, mix brown sugar, white sugar, butter, flour, spices, and baking powder until crumbly; sprinkle over the cake batter.
  7. Bake for about 45 minutes or until a toothpick inserted comes out clean. Allow cooling before slicing.
