  • 1 teaspoon baking powder
  • ¼ teaspoon fine salt
  • 1 cup pumpkin puree
  • 1 cup milk of choice
  • 2 large eggs
  • ⅓ cup pure maple syrup or honey
  • ¼ cup coconut oil, melted
  • 2 teaspoons pure vanilla extract
  • ½ cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 375°F and grease a 9×9-inch baking dish.
  2. In a large bowl, mix old fashioned rolled oats, pumpkin pie spice, baking powder, and salt.
  3. In another bowl, whisk together pumpkin puree, milk, eggs, maple syrup or honey, melted coconut oil, and vanilla extract until smooth.
  4. Combine wet ingredients with dry ingredients and stir until well mixed.
  5. Pour the mixture into the greased baking dish and top with toasted pecans if desired.
  6. Bake for 30–34 minutes or until set; check doneness with a toothpick.
  7. Let cool for about five minutes before serving warm with yogurt or toppings of your choice.
