Polish Apple Pancakes (with yeast) are a scrumptious twist on traditional pancakes, offering a delightful combination of fluffy texture and rich flavor that will charm your family and friends. Unlike classic pancake recipes that rely on baking powder, these pancakes use yeast for leavening, resulting in a light and airy bite. Filled with tender apple pieces and crisp edges, they’re perfect for breakfast, brunch, or dessert. You can even prepare the batter the night before for a hassle-free morning treat. Enjoy them drizzled with maple syrup, dusted with powdered sugar, or accompanied by fresh fruit for an indulgent experience.

Ingredients

Scale
  • 20 g fresh yeast or 7 g active dry yeast
  • 1 cup milk
  • 2 cups flour
  • 2 large eggs
  • 1/4 cup sugar (divided)
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon cinnamon
  • 5 small apples (soft variety)
  • Frying oil

Instructions

  1. Warm the milk to 100-110°F (38-43°C) and mix with the yeast and 1 tablespoon of sugar; let it foam for about 10 minutes.
  2. In a bowl, combine the milk mixture with flour, eggs, vanilla, remaining sugar, cinnamon, and salt. Mix until just combined.
  3. Cover and let the batter rise in a warm place for about 45-70 minutes or refrigerate overnight.
  4. Peel and cube the apples; fold them into the batter gently.
  5. Heat oil in a frying pan over medium heat; pour in batter to form pancakes. Cook until golden brown on both sides.
  6. Serve warm with powdered sugar or your favorite toppings.
