3 small zucchinis
2 eggs
1 pinch salt

2 cups Japanese panko breadcrumbs
1/2 cup grated Parmesan cheese
Instructions
Preheat your oven to 425°F (218°C). Slice zucchinis into 3-inch lengths and then cut into 1/2-inch strips. In a bowl, combine salt and black pepper, beat in the eggs.
Line a baking sheet with parchment paper. Mix panko breadcrumbs and Parmesan on a plate. Dip each zucchini strip into the egg mixture, shake off excess, then coat in the panko mixture.
Arrange coated zucchini strips on the prepared baking sheet without overcrowding. Bake for 20-25 minutes until golden brown and crispy, rotating halfway through.
