  • 11/2 cups carrots

  • 1 tablespoon Italian seasoning
  • 1 tablespoon olive oil
  • 11/2 teaspoons paprika
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup chicken broth
  • 2 teaspoons Dijon-style mustard (optional)
  • Cooking spray

Instructions

  1. In a mixing bowl, whisk together the marinade ingredients (minus the chicken). Coat the chicken thighs in the marinade and let them sit while you prepare the veggies.
  2. Preheat your oven to 350°F (175°C) and grease a large sheet pan with cooking spray.
  3. On the pan, toss together the potatoes, onions, carrots, salt, pepper, and olive oil until well-coated. Arrange them in a single layer.
  4. Place the marinated chicken thighs on top of the vegetables and pour chicken broth over everything. Spray with cooking spray.
  5. Bake for 50–55 minutes until the chicken is golden brown and veggies are tender. Broil for an additional 1–2 minutes for extra crispiness.
