  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 1/2 cups whole milk
  • 1/2 cup vegetable oil
  • 2 tbsp Greek yogurt
  • 1 tsp vanilla extract
  • Cocoa powder for flavoring
  • Strawberry essence for flavoring

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a mixing bowl, combine flour, baking powder, and salt; whisk until mixed.
  3. In another bowl, cream softened butter and caster sugar using an electric mixer until light and fluffy.
  4. Gradually add eggs one at a time, then mix in milk, vegetable oil, Greek yogurt, and vanilla extract until combined.
  5. Slowly incorporate dry ingredients into the wet mixture until just combined.
  6. Divide the batter into three bowls; leave one plain for vanilla flavor, add cocoa powder to another for chocolate flavor, and mix strawberry essence plus pink food dye into the third.
  7. Layer each colored batter in the muffin pan as desired and bake for 20–25 minutes or until a toothpick inserted comes out clean.
  8. Allow cupcakes to cool completely before frosting with fluffy vanilla buttercream.
