  • 1/4 cup natural unsweetened cocoa powder
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 3/4 tsp vanilla extract
  • 1/2 cup boiling water
  • 8 oz cream cheese, room temperature
  • 1/2 cup sugar
  • 2 tbsp milk
  • 4 tsp strawberry extract
  • 8 oz Cool Whip, thawed (or homemade whipped cream)
  • about 20 drops red food coloring
  • 2 tsp vanilla bean paste
  • 3/4 cup heavy whipping cream, cold
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a bowl, mix flour, sugar, cocoa powder, and baking soda. Add egg, buttermilk, vegetable oil, and vanilla; combine well before adding boiling water.
  3. Pour batter into pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool on racks.
  4. For the ice cream layers, blend cream cheese with sugar and milk until smooth; fold in Cool Whip with strawberry extract for the strawberry layer and vanilla bean paste for the vanilla layer.
  5. Assemble by layering chocolate cake, strawberry mixture, second chocolate layer, and vanilla mixture on top.
  6. Finish with whipped cream topping; chill for at least two hours before serving.
