  • 4 2/3 cups Rice Krispies Cereal
  • 4 tablespoons salted butter
  • 10 ounces vegan marshmallows
  • 1 teaspoon peppermint extract
  • Green food coloring (about 10 drops)
  • 3/4 cup mini chocolate chips

Instructions

  1. Grease a large mixing bowl to prevent sticking.
  2. Pour Rice Krispies Cereal into the bowl and set aside.
  3. In a medium-large saucepan over low heat, melt the butter. Once melted, add the vegan marshmallows and stir until about three-quarters are melted.
  4. Remove from heat and mix in peppermint extract and green food coloring until smooth.
  5. Pour melted mixture over the cereal and mix gently until fully coated.
  6. Let cool for about 5–8 minutes, then fold in most of the mini chocolate chips.
  7. Press the mixture firmly into a greased 8-inch baking pan, topping with reserved chocolate chips.
  8. Allow to cool for at least 30 minutes before cutting into squares.
