  • 2 boneless, skinless chicken breasts
  • 2 medium zucchinis
  • 1 cup cherry tomatoes
  • ½ red onion
  • 2 cloves garlic
  • Olive oil
  • Dried oregano
  • Dried basil
  • Smoked paprika
  • Mozzarella cheese
  • Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with olive oil.
  3. In a large mixing bowl, combine chicken pieces, sliced zucchinis, halved cherry tomatoes, thinly sliced red onion, and minced garlic.
  4. Drizzle with olive oil and season with oregano, basil, smoked paprika, salt, black pepper, and optional red pepper flakes. Mix until evenly coated.
  5. Spread the mixture in the baking dish and sprinkle mozzarella and Parmesan on top.
  6. Cover with foil and bake for 20 minutes; then remove foil and bake for an additional 10-15 minutes until cheese is golden brown and chicken reaches an internal temperature of 165°F (75°C).
