  • Zest of 1 lemon
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 24 tablespoons milk (for filling)

  1. Prepare the batter by blending all crepe ingredients in a blender until smooth. Refrigerate for 1-2 hours if desired.
  2. Heat a non-stick skillet over medium-high heat and coat with oil. Pour in a small amount of batter while rotating the pan to cover evenly.
  3. Cook until golden brown spots appear (about 20 seconds), flip, and cook for another 15 seconds before transferring to a plate.
  4. For the filling, blend all filling ingredients until smooth.
  5. Fill warm crepes with the lemon ricotta mixture, roll or fold them, and serve with your choice of toppings.
