Ingredients

  • 1 white fish fillet (cod, tilapia, or haddock)
  • Salt & black pepper
  • Juice of 1 lemon
  • 1 carrot, peeled and cut into sticks
  • Zucchini, sliced into rounds
  • 2 garlic cloves, whole or halved
  • 1 tbsp butter (or olive oil)
  • 1 tbsp fresh parsley or dill, chopped

Instructions

  1. In a skillet, heat half the butter over medium heat. Sauté garlic, carrots, and zucchini for 6-8 minutes until tender. Season with salt and pepper; set aside.
  2. Season the fish with salt and pepper. In the same skillet, melt remaining butter and sear the fish over medium-high heat for 3-4 minutes per side until golden. Add lemon juice during the last 30 seconds.
  3. Plate the fish with sautéed veggies, spooning any pan sauce over top and garnishing with fresh herbs.
  4. Serve hot alongside rice or potatoes or enjoy on its own.
