Keto Chicken Parmesan Zucchini Boats are a delicious and healthy twist on a classic Italian favorite. These low-carb delights feature tender zucchini halves filled with a savory ground chicken mixture, topped generously with melted mozzarella and parmesan cheese.

  • 2 cups marinara sauce (no sugar added)
  • Salt to taste
  • Pepper to taste
  • Garlic powder to taste
  • 3 large zucchinis (or 4 small), halved lengthwise and scooped
  • 3 cups freshly shredded mozzarella cheese
  • 1 cup shredded parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Halve zucchinis lengthwise and scoop out the centers to create boats. Lightly salt and set aside.
  3. In a skillet, cook ground chicken over medium heat; season with salt, pepper, and garlic powder until browned.
  4. Stir in marinara sauce and simmer for 5–7 minutes.
  5. Fill zucchini boats with the chicken mixture, top with mozzarella and parmesan cheese.
