  • 4 cups water
  • 6 bone-in beef chops (34 lbs, about 3/4" thick)
  • 1/2 cup dry apple vinegar
  • 1/4 cup peach jam
  • 1 jalapeno, sliced, seeded, and deveined
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon butter
  • Coarse ground black pepper

Instructions

  1. Prepare the brine by dissolving salt in water in a large container. Submerge beef chops completely and let sit for 30 minutes to 2 hours.
  2. For the glaze, combine apple vinegar, peach jam, jalapeno, and red pepper flakes in a small saucepan over low-medium heat. Bring to a boil and simmer until thickened; stir in butter and set aside.
  3. Remove beef chops from brine, pat dry, and season with coarse ground black pepper.
  4. Preheat grill on high for 15 minutes; then reduce heat to low. Grill beef chops for about 15-20 minutes, turning every five minutes.
  5. Brush glaze onto chops once they reach an internal temperature of 135°F; continue grilling until they reach 145°F.
  6. Let rest for three minutes before serving.
