Ingredients

Scale
  • 4 zucchini (halved lengthwise)
  • 1 tablespoon olive oil
  • 8 ounces cream cheese (softened)
  • 1 cup cheddar cheese (fat-free, shredded)
  • 2 jalapeños (seeds removed, minced)
  • 2 garlic cloves (fresh, minced)

Instructions

  1. Preheat your oven to 375°F. Brush zucchini halves with olive oil and sprinkle with salt. Bake cut-side up on a baking sheet for about 10 minutes until softened.
  2. Remove zucchini from the oven and scoop out some flesh to create boats. Set aside the scooped-out portion.
  3. In a mixing bowl, beat softened cream cheese until fluffy. Stir in reserved zucchini flesh, cheddar cheese, jalapeños, and garlic until well combined.
  4. Generously fill each zucchini boat with the cheesy mixture and return to the oven for another 15 minutes or until golden and bubbly.
