  • 2 cups granulated sugar

Instructions

  1. Wash and dry the lemons. Zest them using a zester, then juice and strain out any seeds.
  2. In a pot, combine lemon zest, juice, sugar, and water. Stir until sugar dissolves.
  3. Heat the mixture over medium heat until boiling. Then reduce to low and simmer for 30-40 minutes, stirring occasionally until thickened.
  4. Test for doneness by placing a small amount on a cold plate; if it gels upon cooling, it's ready.
  5. Pour into sterilized jars while warm, seal them tightly, and allow to cool completely before storing.
