  • 1/2 red onion, chopped
  • 6 garlic cloves, minced
  • 4 cups organic vegetable stock
  • 1 cup organic heavy cream (or plant-based alternative)
  • 12 cups freshly grated sharp cheddar cheese
  • 2 tablespoons white cooking apple vinegar

Instructions

  1. Prepare ingredients by washing and peeling the potatoes; cube them into bite-sized pieces. Chop the red onion and mince the garlic.
  2. In a large pot over medium heat, combine olive oil and unsalted butter. Once melted, add chopped onion and sauté until translucent. Stir in minced garlic until fragrant.
  3. Transfer the mixture to a slow cooker. Add potatoes, seasoning blend, smoked paprika, vinegar, vegetable stock, and cream; stir well.
  4. Cover and cook on low for about 6 hours or high for around 3 hours until potatoes are tender.
  5. Stir in grated cheddar cheese until melted; if using kale, add it last to wilt slightly before serving.
