  • 2 large eggs
  • ¼ cup avocado oil (or olive oil)
  • ⅓ cup maple syrup
  • 2 teaspoons vanilla extract
  • ⅔ cup unsweetened applesauce
  • 1¼ cups whole wheat flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ⅓ cup chocolate chips

Instructions

  1. Preheat your oven to 375°F and prepare a muffin tin with liners or grease lightly.
  2. Squeeze excess moisture from the grated zucchini using a paper towel.
  3. In a large bowl, whisk together the drained zucchini, eggs, oil, maple syrup, vanilla extract, and applesauce until smooth.
  4. Add the whole wheat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt to the wet mixture. Stir gently until just combined.
  5. Fold in the chocolate chips evenly throughout the batter.
  6. Fill each muffin compartment about three-quarters full and sprinkle extra chocolate chips on top if desired.
  7. Bake for 18-20 minutes or until a toothpick comes out clean from the center of a muffin.
  8. Let cool for 10 minutes before transferring to a wire rack.
