  • 500 g chicken breast, cut into bite-sized pieces
  • 1 cup broccoli florets
  • 1 cup green beans, trimmed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 cup cooked mixed rice (brown, wild, and white rice blend)
  • Pinch of salt

Instructions

  1. Prepare all ingredients: wash and cut vegetables and cube the chicken.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Cook chicken until golden brown (5-7 minutes). Remove from skillet.
  3. In the same skillet, add garlic and sauté for 30 seconds. Add broccoli, green beans, and bell peppers; stir-fry for about 3-4 minutes.
  4. Return chicken to the skillet, add sauces and seasonings, stir well, and cook for an additional 2 minutes until heated through.
  5. Serve over warm mixed rice.
